Fresh menu ideas for summer!

“Shellfish is great for summer, as species such as crab, oysters and mussels are widely available during the summer period and can be used in a variety of starter and main course dishes”, said Phil Coyne, Business Development Manager for 3G Food Service & Seafood Solutions. “For example, crab meat is a firm favourite with most diners and is at its bestquality from April to September. Sweet tasting and simple to cook, crab is great when served cold with a crisp, dressed salad and a dollop of seafood sauce or warm with melted butter.

Either way, crab is one shellfish which should be on every menu this summer – not only for its taste but for its wide availability too.”

Popular with discerning chefs, it is a flavourful fish that is becoming increasingly popular in the UK and can be barbecued and served with a lemon and dill butter sauce.
“Caterers should talk to their suppliers about which fish are in season and what works well on the barbecue. Not all fish suits barbecue cooking as some species can break up easily during cooking. Caterers should opt for a firm, meaty fish such as Tuna Steak, Barramundi, Monkfish or Salmon Steak. Oiled lightly and served with a splash of lime juice, these fish are perfect for summer menus.”
