3G's Cold Smoked Salmon is fit for the Queen!

3G was recently selected to supply Cold Smoked Salmon Fillets for a royal lunch, which was attended by the Queen. The lunch was held on 12th June 2008, when the Queen formally opened the new home of the Royal Artillery, at the Royal Artillery Barracks, Larkhill. 3G was chosen to supply its premium, chilled smoked salmon after a number of tasting sessions with Larkhill’s Executive Chef, Paul Stebbing, and once final menu approval had been granted by Buckingham Palace.

On the day, 3G’s skinless & boneless Cold Smoked Salmon Fillets were used in the main course dish - pan fried salmon served with a complementary watercress sauce. Paul Stebbing explains why 3G was selected to supply the fish:

3G’s premium Cold Smoked Salmon Fillets (140 – 160g) come from salmon farmed in the Shetland Isles and each fillet is smoked in a kiln at 28°C, with a combination of oak and beech chippings. As the salmon fillets are cold smoked, the natural flavours from the fish are infused with the smoke to provide a unique flavour, as Phil Coyne, Business Development Manager for 3G Food Service & Seafood Solutions explains:

“We find that using only Superior Grade Scottish Farmed Salmon for our cold smoking process produces the unique smoky, relaxed melt in the mouth flavour and texture. It’s one of our premium products in our range and is a great product for caterers looking to develop their gourmet fish & seafood offering. It’s also perfect for special, VIP events which require the best products available - such as the recent Royal lunch.
